Whisky and Chocolate: why has it taken me so long?

Whisky. Chocolate. Two undoubtedly magnificent creations. Why, then, has it taken me so long to realise that combining the two is the best idea hit upon since a particular Bill Lark fishing trip?

Enter Ian Reed, organiser of tenuous themes for Whisky Business, who decided the night’s proximity to Easter was as good an excuse as any to bring along chocolate bunnies to the next gathering.

While the selection of whiskies was sure to be excitingly varied, the selection of chocolate turned out to be less so, although this was through no fault of mine or Craig’s, who both brought some excellent blocks (disclaimer: mine was slightly more excellent). Ian gathered everyone together. It was time to begin.

Whisky number one, it transpired was the Scapa 16 Year Old, a lovely and easy drinking Orcadian drop. However tonight I couldn’t help but notice an intriguingly pleasant bitterness about it, so selected an equally bitter 70% dark chocolate to accompany it. My results were as follows:

Bitter + bitter = not bitter!

Strangely enough, together the two bitter flavours cancelled each other out and left smooth and sweet strawberry and melon notes I hadn’t noticed before. A win for the paring!

Whisky number two was immediately picked by Craig as a rum barrel finish, which was either a lucky guess or proof that he knows his stuff. The whisky was a 15 Year Old BenRiach, which had indeed been finished in rum barrels. I selected a Lindt Salted Caramel to accompany it.

Apparently the secret to unlocking the fruit flavours in the rum finish was a block of salted caramel chocolate! Two out of two for the chocolate paring!

Whisky number three had been matured in sherry casks, this much I could tell. I quickly ruled out Glenfarclas and took a stab at another famously sherried whisky: Glendronach. Imagine my pleasure (read: smugness) when it turned out to be the Glendronach 18 Year Old (Big Sam) Allardice. One sip gave away the Olorosso maturation. It was dry. As in really dry. And I loved it. I went for the strong stuff. 90% dark chocolate. No messing around here.

Dry whisky + dry chocolate = the Sahara desert.

I suspected that one ingredient may make the other sweeter in comparison. I was wrong. This combination could not even be crossed upon a camel. And I loved it. Three out of three.

After a short break filled with science jokes from Bish, and vaguely Easter-themed jokes from Rosie, we moved onto whisky number four: the clue from Ian being that its name was Gaelic for ‘natural’. Because I speak fluent Gaelic (or because I’ve read it on the internet) I immediately realised we were trying the cask strength Glenlivet: the Nadurra. I needed a feisty chocolate to compete with this, so selected my own contribution: a fancy and fully-flavoured Anvers salted caramel chocolate.

Strong whisky + strong chocolate = Pirates of the Caribbean!

Ok, yes, by this stage of the night my pairing notes were starting to get, shall we say, ‘creative’, but hear me out. I mean this in a way that these two flavours did not go together. At all. In fact they clashed. In fact, they clashed entertainingly, one might even say ‘swashbucklingly’ (if one could pronounce such a word at this end of the evening). Hence: Pirates of the Caribbean.

Whisky number five, the final dram of the evening, was wonderful. There was subtle peat on the nose, mild sweet spices on the palate, and a warm lingering finish. It had to be Laphroaig, and as it turned out, it was the 18 Year Old. It was a wonderful dram and I paired it with the 70% dark chocolate. At this point of the night, the equation was simple:

Whisky + Chocolate = awesome.

I don’t think I really need to explain this one.

There can’t be too many whisky awards that have an entire category for whiskies from only Tasmania – but as it is one of the key focuses of our blog we thought we could justify it (plus we’re just outrageously proud of the whisky we produce down here). So it gives me great pleasure to announce that the inaugural winner of the Isle of the Drammed Award goes to:

This bottle is a truly deserving winner. Its contents possess the unique buttery Hellyers Road flavours, but mix them with sweet, bold fruit and toffee notes. It’s a stellar dram. We’re also hoping that after this award, its value goes up immensely, as there are very few bottles left, and both us Wafflers own one.

Scotland is indeed the spiritual home of the water of life. So our awards night naturally must contain a category for the best dram made in the motherland of whisky. Plus, we wanted to ensure there was a category that Yamazaki could not usurp from the Scottish. So without further ado, the Tartan Slipper goes to:

The Balvenie DoubleWood 17 Year Old

The first Balvenie we ever tried was the Balvenie DoubleWood 12 Year Old – and we loved it. It was our favourite expression from the distillery for a long time – until we tried this one. It still contains the unique fruit and vanilla flavours found in the 12, but the smoothness and complexity has been dialled up to ten. No: seventeen! This is a tricky drop to get your hands on, but if you find it, boy is it worth it.

We’re not going to lie to you – buying bottles of whisky can be an expensive business. It took full time jobs for us to realise the step up in quality from a Ballantines to a Balvenie. But that doesn’t mean that we don’t appreciate a bargain when we see one. So without further ado, may I present the Pocket Pleaser Award to:

The Glenlivet 12 Year Old

This whisky has everything you want from a single malt. Character, complexity, sweetness and flavour galore. And better still, it will not break the bank. If you find a bottle for under $50 in an Australian bottle shop – don’t think – just buy it!

Let me clarify right now that this award is by no means a bad thing. We’re a fan of whiskies of all shapes and sizes – and when a whisky completely bamboozles us, we cannot help but go back for more. So with that in mind, the The Weirdsky Award for the most WTF Whisky goes to:

The Glen Moray Chardonnay Cask 10 Year Old

Yes, you read correctly. This whisky has not been matured in Château Cissac barrels, or Château d’Yquem casks. Nor has it spent six months in Tamar Valley Pinot Noir barrels. No, Glen Moray has chosen to age this whisky purely in plain and simple chardonnay casks. And it’s not bad! It has an intriguing nose and some really curious flavours, but slides down nicely all the same. It really is a perfect sunny day dram, and one that may be consumed in some quantity this summer.

 

5 The Bill Lark Award Whisky Waffle

The Bill Lark Award for outstanding service to Tasmanian Whisky

If there is one man alone with whom you can credit kick-starting the Australian whisky industry, then it could only be Bill Lark. Labelled the Godfather of Tasmanian whisky, his vision is the reason that we are here today (in the case of some of us: literally!). This award goes out to recognise an individual who has made an exceptional contribution to the Tasmanian Whisky industry. So now, it gives me great pleasure to announce the inaugural winner of the Bill Lark Award is:

Well, who else could it be? For all the reasons previously mentioned, this man thoroughly deserves to be this award’s first winner. Everyone raise a Glencairn and toast to this man’s incredible achievements!

 

6 The Golden Dram Whisky Waffle

The Golden Dram for the best dram whisky in the world!

The final award of the night is the big one! Just a quick disclaimer: for this category we’re using ‘golden’ in its traditional sense, meaning ‘of great value’; none of this ‘Macallan Gold’ entry level nonsense. And it goes to, quite simply, the best whisky we’ve tasted this year. There are no other requirements, such as country, age – or even single malt. It is simply our favourite whisky of 2014. Drum roll please. The winner of the 2014 Whisky Waffle Golden Dram is:

How can a couple of peat lovers go past the most heavily peated whisky in the world (at the time). But this whisky is more than a gimmick. Jim McEwan at Bruichladdie has created a whisky that is complex and intriguing and flavoursome – and has the longest lasting finish of any that we have ever tasted. The 06.2 version is a tricky one to find – anywhere – but it has the edge over its 06.1 brother. This is the whisky to get – if you can find it. Maybe it will be the whisky of 2014 and no more. But out of all the drams in the world – 2014 has got a special one.

Five Golden Drams: 5 whiskies to drink at Christmas time

If all the tinsel strewn about the place and the cheesy background music in supermarkets hasn’t been enough of a giveaway, I’m here to tell you it is very nearly Christmas! This means a number of things: countless family dinners, last minute gift-shopping, pine needles all over the house, and of course, holidays!

I’m extremely keen to have a bit of free time this Christmas to spend relaxing: feet up, Glencairn in hand. But what, I hear you ask, is contained within this glass? The short answer is: whisky. But they don’t call us Whisky Waffle for nothing. So here is the long answer. Ladies and Gentleman, I present to you: Five Golden Rings – I mean drams.

5. Balvenie Caribbean Cask 14 Year Old

As you may or may not be aware, m’colleague Ted and I are from the rather little state of Tasmania in the rather large country of Australia, both of which can be found in the southern hemisphere, meaning that Christmas falls squarely in the middle of our summer. Now, to you from The North the concept of a sunny Christmas must be a completely bizarre one, but to us here, BBQs, beers, bicycle riding and baking hot weather are natural Christmas day occurrences. So my number five whisky reflects this.

5 Balvenie whisky waffle

The Caribbean Cask (either through its flavour profile or by the power of suggestion) has a very tropical taste reminiscent of a banana smoothie. It is the perfect summer’s day drop and is easy to knock back while basking in the sun in the early afternoon after a big Christmas lunch.

4. Glenfiddich 15 Year Old Solera

This drop is a little more traditional in its connection to Christmas. It finds its place on this list, as its flavours suggest sultanas, raisins, plums and other dark fruits. It is the perfect dram to savour in the late afternoon with a slice of dessert – because, quite simply, this dram is Christmas pudding in whisky form.

3. Hellyers Road 12 Year Old

This one is more of a personal connection. Having only been recently released, Australia’s first 12 Year Old age statement bottling is a superb drop and one I am coming to appreciate more and more with every taste. It is smoother than anything so far created by the Burnie distillery but still contains a unique buttery shortbread flavour that is so specific to Hellyers Road. It is also very reasonably priced compared to most other Tasmanian products and for that reason alone is a very good option as a stocking filler for the discerning whisky drinker.

2. Auchentoshan Three Wood

I’ll be honest, if any drop were to make me think of Christmas, it’s this one. It’s not just the Christmas pudding, but the brandy butter, too. It is smooth and extremely drinkable, but complex and long lasting. It’s accessible to non-whisky drinkers but also interesting enough for seasoned veterans. In this way, it brings unity to your grandparents’ crowded living room at the end of the day. If you needed just one bottle to share with the people you love the most at Christmas, this would have to be it.

1. Ardbeg Uigeadail

Although I will have spent my Christmas day bathed in glorious sunshine, people back in the traditional home of whisky are unlikely to be so lucky. In fact, the early pioneers of the water of life probably spent many Christmases shut away in small uninsulated huts in the snowy highlands with nothing but a peated dram to keep them warm. This selection is for them.

There are very few better examples of a warming peated whisky to be found anywhere in the world. And who else but Ardbeg could provide us with a complex, sherried, spicy and warming dram such as this. The Uigeadail (or Oogie, and m’collegue and I refer to it as) is simply one of the world’s best readily available whiskies. A portion of my final paycheque before the 25th of December was dedicated to this bottle, and when sitting back in a comfortable armchair after a long but pleasant day of food, presents and family of all ages, I’ll claim that nothing goes down better than a generous nip of Ardbeg Uigeadail.

Whisky Appreciation and Nosing Collective – Night 2

Good whisky. Good company. Nowhere better to be. All the hallmarks of a brilliant night. We had already organised one excellent evening for the Whisky Appreciation and Nosing Collective (the acronym formed is indeed apt) so another was bound to happen. And although it was held up by the final participant being slightly behind schedule (three hours behind schedule, no less) the night was a rousing success.

All members contributed a bottle (or several) to be sampled throughout the night, and we managed an interesting balance of single malts and blends, from Scotland, Tasmania, and even our first foray into Irish whiskey. All were enjoyed by the group, but some more so than others.

Coming from Tasmania, we of course loved the Lark standard release (we had long since polished off the Distillers Edition, sadly), but the revelation was our first sample of another rapidly-rising Tassie distillery: Nant. This one was smuggled along by the rather late member in a small pocket sized flask, so his wife was not alerted to the bottle’s attendance. It proved to be big, well rounded, fruity and all together delicious, another feather in the cap of Tasmanian whisky.

The pinnacle of excitement of the night was the opening of one of the more peculiar bottles in our collections – a blend of Islay malts, featuring a large-nosed pirate on the label. It was of course, Big Peat, and the bottle we finished the night with, expecting an intense smokiness unlike anything we’d tried. And in some ways it did deliver. But the bottle was such a one trick pony (peat and… not much else) that we were a little disappointed.

The real winner of the night was the dram we preceded the Big Peat with. This was the Talisker 10 Year Old and we all agreed it to be a fantastic drop. It certainly is one of the more impressive 10 Year Old malts going around, and perhaps only rivals a certain two Islay 10 Year Olds for supremacy in this category. But that is a debate for another night. This one was simply concluded with a nod of appreciation to all we had tried. And then a sneaky dram of Lagavulin 16 to keep us warm as we walked home.

Johnnie Walker: the verdict

Hi Wafflers! Johnnie Walker Week is officially over and we have emerged unscathed and wiser from the other side. Throughout the week we’ve gained an appreciation for blended Scotch whisky – and even more of an appreciation for single malts.

All joking aside (and there were a few of them this week) Johnnie Walker has produced a formidable range of whiskies and we can understand why they are the most popular in the world, even if we respectfully disagree.

So what have we learned throughout Johnnie Walker Week? Let’s pick through the shrapnel:

  • The Red Label is consumed throughout the world as a mixer. And after trying it neat – we understand why;
  • The Black Label likes to think of itself as a step up – and it is – but not nearly enough to consume neat;
  • The Double Black fixes the problems of the previous two with solid flavours and a generous dose of smoke, and in our opinion is the best value in the range;
  • The Gold Label Reserve balances its flavours well, although sadly there are not many of them to balance;
  • The Platinum Label 18 Year Old is beautifully smooth but lacking in soul;
  • The Blue Label is excellent – but very expensive. And when you could buy a Balvenie 21 Year Old for the same price – why would you go for the blend?

So there you have it. Whisky Waffle’s first ‘event week’ has concluded. Johnnie Walker Green Label

Johnnie Walker Green Label is – or I should say was – a bit of an anomaly in the family. Unlike the others which are all blends including grain and non-malt whiskies, Green was a blended malt made up of only four whiskies, all single malts. This gave it the quality of arriving like a blend then developing on the palate more like a single malt. It’s nose complexity was also more akin to a single malt, and the better noses out there could probably pick the distilleries involved from the smell.

I happen to know what they were, but so as not to spoiler, you’ll have to ask me.

 

An elegy for Johnnie Green

Though caramel brown, your label was Green

With flavoured malt so crisp and clean

A complex coffee fruity smell

Vanilla and nuttiness went down well

The taste had cereals, chocolate and nuts

Not sharp or heavy but you sure had guts

A finish strong with walnuts and honey

Of Johnnie’s varieties you were worth the money

One day the factory shut you down

Scotch lovers everywhere gave a frown

No more would we have our favourite blend

A standout nip, a lifelong friend

Now we’re confined to Black and Red

That burns our nose and hurts our head

There’s lots of fine drams out there today

And where there’s a Walker there’s a will and a way

But for now we must simply say farewell

You were a classic, a legend and we think that you’re swell

 

Now a rare and hard to find malt, Green is consigned to the archive of Johnnie Walker’s bond store along with the Gold Label 18 (they’ve removed the age statement for the current variant) and the elusive Johnnie Walker White Label which I have never tasted. If you find a sealed bottle of Green, you may want to hold onto it for its value but I would strongly encourage you to pop the cork and taste a true exception to the rule. If you spot a half open bottle on a friend’s shelf or in a dark musty pub, encourage the friend to crack it at a party or buy it shot by shot from the wizened landlord.

If you are a single-malt snob who sees the word blended and runs a mile from the likes of Green and the very delicious Blue Hanger, thank you. More for the rest of us.

Blue Label Whisky Waffle

One of the reasons we like single malts is the variability in character; all the little quirks and oddities that come together to create something exciting and different every time. The experiences they leave with you create a lasting impression, such as the first time Ted tried a 72% ABV Heartwood, all crazy and wild and exhilarating, or the time Nick tried an English single malt in a Scottish bar and nearly poured it down the sink, much to the amusement of the patrons.

In comparison, blends tend to be a lot less individual, which is hardly surprising given that the elements are painstakingly selected for their ability to meld seamlessly together. Very rarely does a blend give you something to talk about and really get your teeth into. Not so the Johnnie Walker Blue Label, the proclaimed pinnacle of the standard Johnnie Walker range. Discovering this came as somewhat of a surprise to we Johnnie Walker sceptics.

Unlike any of the other previously reviewed releases, there is a great deal more complexity on the nose. There are delightfully interacting elements of oak, chocolate, and fruit such as oranges, pears and peaches, complimented by a light hint of smoke. The overall character is very warm and welcoming.

The mouth is actually relatively sweet, but so completely different to the overbearing, manufactured sickliness of the Red Label that it’s hard to believe that the two are made by the same company. It’s more like the pure sweetness of a really good light honey. The flavour develops through caramel, to sweet orange, and on to slightly bitter cocoa, all the while accompanied by a pleasing gentle smokiness which lingers on the tongue.

The Johnnie Walker Blue Label has certainly not committed the cardinal whisky sin of being boring. It is rare that a blend has this much complexity, and gives us so much pleasure debating its merits. After all, the best whiskies are the most memorable ones. We’re still not entirely convinced it’s worth the $200 price tag, but after a couple of drams we’re much closer to believing it.

Let us picture a woman: she wears chic white designer clothes, and her platinum blonde hair is perfectly styled. She is beautiful, with flawless ivory skin and delicate features, and yet her pale grey eyes are cold and her face is blank of emotion. She is like an icy white marble statue come to life. Her house is filled with expensive minimalist designer furnishings, all in white, and the effect is striking and elegant. Yet somehow it leaves you feeling empty; it’s too clean, too clinical, lacking in any warmth that allows you to develop an emotional connection.

If you distilled the idea of the white lady and her house, and bottled it, then you would capture the essence of the Johnnie Walker Platinum Label. The Platinum is marketed as one of the top tier bottlings in the standard Johnnie Walker range. It is delicately assembled from a selection of minimum 18 year old single malt and grain whiskies, and was inspired by the private blends created as gifts for the upper echelons of the Johnnie Walker hierarchy.

On the nose the Platinum is very light and delicate, with hints of dusty oak floorboards, cereals such as bran, oats and barley, chocolate, and coffee. There is no sweetness or fruitiness here, and as such the scent is rather dry and wooden as a result. The mouth is extremely smooth, with subtle flavours of polished oak and walnuts. A flicker of sweetness is allowed, perfectly balanced by a dash of bitterness. The end is dry and provides a grind of black pepper followed later by a sprinkling of ash.

There is a sense that the Johnnie Walker Platinum Label is a stylish drink created for those with sophisticated tastes, and yet in trying to achieve this they somehow miss the point. Yes, the flavours all work together superbly, but as a whole it’s too refined, polished to the point where there is no spark left to bring it to life. The white lady is beautiful to behold, but be warned, her heart is cold and she will not give you the love and warmth you crave.

It is said that many years ago, three wise whisky tasters came from the east (probably Speyside) to bequeath fantastic gifts upon the saviour of blended whisky. The first wise man brought a very special present: gold. Specifically, Johnnie Walker Gold Label Reserve (the other two of course brought Johnnie Walker Frankincense Label and Johnnie Walker Myrrh Label). Somehow, as if by divine intervention, I found myself in possession of one of these relics: the Gold Label Reserve. Upon reverently pouring myself a dram, I heard a choir of angels singing joyous melodies. I then brought the vessel to my lips and drank.

Confusion then hit me. Is this… it? Surely a bottle titled: ‘Gold Label Reserve’ should be a drop unlike any other! But no. This whisky is not the messiah. It is a very naughty boy.

In 2013, Johnnie Walker re-marketed a range of its products. The fan favourite Green Label was removed, a shiny new Platinum Label 18 Year Old was introduced, and the Gold Label was re-branded as Gold Label Reserve, in the process losing its age statement. In theory, the addition of the word ‘Reserve’ indicated a more esteemed and better tasting product. But in practice – they created a drop that was disappointingly unremarkable.

There are traces of citrus on the nose, as well as cocoa and some herbal notes. The sweetness is there, but it is far more subtle than in lower tier Johnnie Walker releases. All of these elements are no more than the merest hint. However it’s well balanced as there is not a great deal of flavour to weigh up. The mouth feel is similarly unexciting. Candied chestnuts, orange peel and a small amount of spice come through, while the finish is short with only a faint dash of caramel lingering. The supposedly ‘trademark’ Johnnie Walker smoke disappears like the vivid details of a dream after you have awoken: vanishing rapidly, as if it had never been there in the first place.

The Johnnie Walker Gold Label Reserve is a good blend, there is no doubt about that. No one flavour dominates the palate and it is unquestionably smoother than the lower tiered releases. It is simply unmemorable. In fact, it is borderline bland. If this was a less esteemed release I would, in all likelihood, applaud it. But for a whisky that calls itself ‘Gold Label’? Such a sin is simply unforgivable.

Double Black Whisky Waffle

Picture the scene: we are standing in the secret headquarters of Johnnie Walker, built cunningly into a mighty tor in the middle of a lonely Scottish loch. A meeting is being held between the head of whisky R&D (Codename: W) and his underlings…

W: “Gentlemen, I have created a new mid-range (but very reasonably priced) whisky. But what to call it?”

Underling: “Well sir, if it’s mid-range then it must be above the Black. If people associate the name Black as being a notch up, a bit more classy, that sort of thing, then surely they’ll think that ‘Double Black’ means twice the class?”

W: “Genius! Give that man a dram and a slice of haggis!”

Amazingly, Johnnie Walker has managed to deliver just that. Compared to the decidedly woeful Red, and the close-but-not-quite Black, the Double Black really is twice the drink. The boys in the back have managed to iron out the kinks that plagued the previous two iterations and produce a far more balanced and exciting drink.

The element that is really allowed to shine in the Double Black is peat smoke. Johnnie Walker likes to talk about how their whiskies have a smoky nature, but it is here that they open the door and let it out to play. Even the bottle suggests it, being coloured a very dark smoky blue-grey.

Gone are the harsher unbalanced notes from the Red and the Black. Instead the nose gently presents hints of smouldering charcoal, cigars and leather, over rich stewed plums and strawberries with spicy honey. The mouth brings an initial hit of lightly charred oak followed by nicely balanced sweetness and spice. The overall feel is pleasantly smooth and manages to introduce points of interest without capturing any unwanted notes.

While the Red and the Black are only really good for mixers, the Double Black is the first rung on the Johnnie Walker ladder worth enjoying neat. Thanks to the well balanced flavours and that sexy hit of smoke, combined with the very reasonable price tag, the Johnnie Walker Double Black has it in spades, and is a seriously good choice for anyone contemplating a blend.
