A Rye look at Belgrove

In our review we jokingly referred to Belgrove Distillery’s Peter Bignell as the da Vinci of distilling. When we visited him, we discovered that we were actually bang on the mark. Case in point was his method for powering the pump that injected homemade biofuel into the burner for the still: an old Sunbeam Mixmaster (usually on ‘Whipped Cream’ setting!).

Our arrival at the distillery was actually rather hampered by some pesky road workers, who decided to dig up the highway in front of Peter’s driveway half an hour before we arrived. We had to call over a massive grader to flatten the surface enough to get the Alfa over (the troubles with low sports cars).

Belgrove distillery takes its name from the property, which is also a working farm. This was apparent as soon as we opened the gate and spied a flock of freshly shorn sheep, which we later discovered Peter had taught to eat leftover rye mash. Scattered around the old stables building that houses the distillery were various contraptions cannibalised from old washing machines, scrap metal and Russian Typhoon-class nuclear submarines.

The distillery, located just outside the southern midlands town of Kempton, is unique in Tasmania in that it predominantly produces its spirit using rye instead of barley. The story goes that Peter had a spare paddock full of rye that needed using and so decided to turn it into whisky. Rather than buy expensive new equipment, and prescribing to a reuse and recycle ethos, he instead decided to build everything himself.

We need to stress that home-made doesn’t mean rubbish; the malter/peat smoker crafted out of an old tumble dryer is a work of genius, and the mash tun is perfectly functional – until it gets clogged up by the huskless rye that is. Peter quipped that when this happens he has to put the old wooden paddle appropriated from his kids’ dinghy to work to unclog it (he’s changed both the handle and the blade three times apiece, but maintains it’s still the same paddle).

Peter has been a farmer his whole life, only turning to distilling seven years ago. He said that his university degree in agricultural science has been invaluable, allowing him to exploit the science behind the art, although he doesn’t downplay the role of the natural yeasts and bacteria that inoculate the mash, which he refers to as Belgrove’s unique terroir. Peter is completely hands on with the whole process, from growing the grain, to the distilling, the bottling and especially the tasting.

Luckily enough we were able to join him in tasting a variety of interesting spirits, including rye, barley, apple hatchet (distilled apple cider), ginger hammer (distilled ginger beer) and even an experimental batch of eau de vie that Peter was trialling for Tasmanian Cask Company’s master cooper Adam Bone, who dropped by to check on proceedings. The range was varied, exciting and specific to Belgrove, and it was inspiring to be able to taste such contrasting flavours produced in the one place.

We did however have our favourites; the rye at 47%, Pommeau (apple hatchet cut back with apple juice) and especially the Pinot Noir matured rye at cask strength, of which we took home bottles #1 and #2 of a new barrel. However, revelation of the day was the 100% malted barley smoked with peat from the previously untapped bogs in the north-east of the state. Good people of the world, are you ready for Tasmania’s answer to Scotland’s Islay? Well, it’s maturing in Peter Bignell’s bond store at this very moment.

While Peter is expanding the old stables to house a new still and larger malting equipment, he still resolves to remain stubbornly small scale, championing the merits of a hands-on approach. He muses that “big distilleries only care about how much whisky per kilo of grain they can get. I’m trying to get the most flavour.” From our all too brief visit, it is clear that he is succeeding in that vision.

Tasmania is home to many distilleries, big and little, but perhaps none is more eclectic and fascinating to explore than Belgrove.

So, you’re a big fan of peated Scottish single malts, but in order to save the world from certain destruction (just go with it, ok?) you have to buy a Tasmanian whisky. What are you going to do? Never fear, Hellyers Road has your peat needs covered with their appropriately named Peated expression

When it comes to peated whisky in Tasmania, the situation is a little more complex than first meets the eye. Tasmania actually has its own peat bogs, however the smoke is quite different to the Scottish stuff, being softer, gentler and more rounded. It is also restricted to a few distilleries that own leases to the bogs (the rest is locked up in national parks and the like).

In Hellyers Road’s case they don’t have access to a native bog, so instead they import peated barley all the way from maltings in Inverness, Scotland. The side-effect of this is that Hellyers Road Peated is much more closely aligned to Scottish drams than other Tasmanian malts (side note: Hellyers Road use local grown barley for their non-peated expressions).

Nosing the Peated expression is like standing in a grain storehouse, grabbing a big handful of peat-smoked barley and taking a deep sniff. Underneath the big, fat, bold, smoky cereal flavours can be found cocoa, black currants, pencil shavings and smouldering leaves.

The first layer of taste is what you would probably expect from a heavily peated whisky – strong, thick smoke that billows around the mouth, a bit like standing on the wrong side of the campfire. When you clear away the smoke however, you are left with a light, smooth and slightly sweet dram, without too much else going on. The finish is long and smoky, but gentle. In fact, the smoke probably rounds out the feel of the dram as a whole, smoothing out some of the harsher edges that can be found in a younger whisky such as this.

When compared to a traditional Islay single malt like Laphroaig or Ardbeg, the Hellyers Road Peated perhaps misses some of the strong coastal flavours that punch through from underneath, but makes it up in other areas. A light whisky, heavily peated, this Hellyers Road expression delivers a different experience to anything else available from Tasmania.

Great Outback Rare Old Australian Single Malt

Great Outback Rare Old

This is weird story worthy of a waffle. Australian whisky has a generally agreed history, the modern chapter of which begins in the 1980s with the Lark family overturning a century and a half of legislative prohibition on distilling in Tasmania. This led to a resurgence of distillers and, as a very appropriate homage to whisky’s very beginnings, some people who had no doubt been fooling around as bootleggers went legitimate. The Great Outback Rare Old Australian Single Malt – a mouthful of descriptors, almost as if someone took all the best buzzwords that make whisky seem exclusive and put them all into the name – is a mystery in that history.

From what I can gather from my Poirot-esque deductions is that it was distilled somewhere between 1960 and 1985, that it is either from a now forgotten Tasmanian still (the bottle indicates it was produced at the Tasman Distillery, which no-one can find) or a Western Australian still pretending to be Tasmanian, and that it is pretty rare. Some rumours include that it is the reject stock of the closed Corio Distillery or that it is not Australian and was just labelled that way to hide an origin that would have been less palatable. It is a confirmed fact, however, that this single malt has a blended variety that can still be found so maybe these rumours of reject stock and foreign distillation are accurate for the blended version.

Something that is more than rumour is that this whisky is actually very good. With a label that looks like a knock-off product sold by some people who’ve refilled an empty bottle with some water and caramel colour, it is about as far from that as you can imagine. The colour is a nice pale gold suggesting there is a straight bourbon cask maturation and on the nose I think that is correct but there is also a vivid complexity I was not expecting. It’s fresh and grassy, with a little toffee and vanilla, but also a lovely tropical fruit and pineapple citrus alongside an orange smell that is actually reminiscent of Lark. Not only that, but there are some interesting botanicals with fresh thyme and something peppery thrown into the mix.

The other brilliant thing about it, which transfers over to the palate, is it is devoid of the ethanol kick that can permeate and drown out the subtleties. The relatively low alcohol content helps this, but it is also just a very clean and crisp spirit. There is certainly some tropical fruit – brilliant passion fruit – and the malty vanilla really comes out to balance against the toasted oak flavours. It is unsurprising that it is not peated, as this was presumably created before peat bogs were officially uncovered in Tasmania or peated barley was imported. Or before peat even existed anywhere in the world, who knows.

This is not a whisky for people who are looking for a heavy hitter, a peaty belter, or an oak punch. It is certainly not for anyone who wants to be able to sit down with book and look up the dram as they drink it. This one for those who like a crisp and complex confectioner’s creation with a side of Conan-Doyle intrigue to keep them guessing.

If you are the distiller of this fine drop, get in touch. Partly because there are several questions I have for you, but mainly because I am hoping you still have a few bottles of the stuff kicking around the attic you might be willing to offload.

Highland Park Svein

Highland Park have one clear advantage when it comes to marketing their whisky: Vikings. Nothing can drum up some interest liked a horned hat on the front of your bottle! Of course, Highland Park can quite rightly look to the Norse raiders when branding their products, as the Orkney Islands where the distillery is located have a proud Viking heritage.

The details of their arrival in the ninth century are told in the Orkneyinga Saga, a historical narrative with more twists and family betrayals than the best soap opera. Among the characters were a series of ‘warriors’ immortalised forever in travel retail by Highland Park.

Svein Asleifsson is the legend behind the entry level of the range – which is perhaps unfair to a man dubbed the ‘Ultimate Viking’. Svein was a charismatic chieftain known for his generous and hospitable nature, and the folk at Highland Park have attempted to create a whisky that mirrors these traits. While I cannot claim this to be exactly the case (it doesn’t pour generous nips of itself into your glass!) it is certainly a very drinkable drop.

While there’s definitely some smoke in there, there’s less on the nose than you’d expect from a Highland Park dram. Instead there are ripe oranges, red apples and plenty of malt. The palate is lightly spicy, with oak, strawberries and… burnt toast? The finish is creamy, malty and slightly bitter. All up, it is a light whisky, threatening to be inconsequential but with just enough to enjoy.

Highland Park have created an interesting series here. While Svein doesn’t stand up when compared to the wonderful 12 Year Old expression, it certainly gives you a greater picture of the flavours captured by the Orcadian Distillery. Sadly I have not got to sample any of the other warriors to broaden my mind!

Longrow Cabernet Sauvignon Cask

As the abundance of sherry barrels diminishes, whisky makers are forced to look elsewhere for maturation options. The obvious solution, of course, is using the barrels of another grape flavoured product – no, not hubba bubba bubblegum – wine. Wine cask maturation is being used by distillers worldwide: some as a novelty but others as a serious addition to their main range.

The wonderful whisky makers of Longrow are no strangers to experimentation. One of their more intriguing bottles is the Cabernet Sauvignon Cask – aged for seven years in refill bourbon hogs heads and a further four years in Cab Sav barrels sourced from my very favourite wine region: South Australia’s McLaren Vale.

Warning: this is not a beginners whisky. Nor is it an easy drinking whisky. Nor, I believe, could I describe it as a ‘nice’ whisky. But it sure is a fascinating one. On the nose I detected, well, heaps. Initially a gentle smoke, reminding you that yes, Longrow do peat their barley. Once the smoke clears notes of grapes, banana and burnt orange rind flow through. Over all, it is complex and delicious.

The palate is a bit of a shock. Initially it is sweet with fizzy sherbet complimenting the peat. The red grapes make a return, along with other fruit such as melons and apricots. And then the spirit transforms. The finish is long, though not necessarily because of the slightly higher percentage of alcohol. It’s a little… soapy? This is a tasting note I (and seemingly I alone) seem to find in many wine-matured whiskies. There are other, nicer elements: smoked ham, salt, fish, bonfire ash, general seaside senses. This whisky is from Campbelltown, after all!

In no way do I regret buying this whisky. There’s a lot to like and a lot to discuss. But I didn’t love it. And that’s ok.

Highland Park 12 Year Old

Single malts. They’re a varied lot. Some people like peat monsters. Some like sherry bombs. Others enjoy their whisky light and floral. Others still prefer their drams sweet with hints of vanilla. Pleasing everyone with one drop, however, is a much harder task. Unless, of course, you happen to have a bottle of the Highland Park 12 Year Old on your shelf. This bottle truly is the great all rounder of Scottish whisky.

Highland Park also has the distinction of being Scotland’s northernmost distillery, located on the largest of the Orkney Islands, pipping its neighbour Scapa by under a mile. As the island group was settled long ago by Vikings, it should come as no surprise that the flavours on offer are a veritable smorgasbord.

Up first comes a nose with many varied elements: a whiff of grapes and malty biscuits. There is chocolate, so dark it is mostly cocoa, mingling with notes of pear and bubblegum. Finally is the smoke: far subtler than anything from Islay. It brings to mind smouldering vegetation, an attempt to create a fire from damp leaves on a drizzly day.

The palate is equally varied. It initially suggests a roast meal: beef, parsnips, even gravy, before giving way to mandarin, brown sugar and chocolate milk. The smoke lingers gently, now mostly burnt out and close to charcoal. Finally this all gives way to a long spicy finish with salt, tobacco and mint combining with flashes of caramel.

The Highland Park 12 Year Old is unlikely to be anyone’s number one whisky. It is not weighted in a particular direction to please one group of whisky fans over another. Instead, it sits squarely in the middle, a dram to be enjoyed by everyone no matter their preferences. This is a whisky that brings people together, and if that is not a glowing endorsement, I don’t know what is!

Bunnahabhain 12 Year Old

The world of whisky is a lexicological minefield, populated by distilleries and bottlings with all manner of weird and wonderful names. The birthplace of whisky in particular likes to play mind games with the innocent, wide-eyed bystander, the Scottish tongue bending words in ways you just wouldn’t expect.

A true prince of the pack is a distillery from Islay with a name that causes the unprepared mind to melt at the sight of it. Gather your wits dear reader and say hello to Bunnahabhain (phew!). Right, so just to be clear, that’s BOO-na-HAVen (but to really get it, here’s a helping hand from Brian Cox).

The Bunna, as it is more colloquially known, is one of the oldest distilleries on Islay, producing drams since 1881 in the village of the same name. Naturally, being from Islay means that Bunna drams are peated. Unlike other distilleries on the island, however, they aim for a far more subtle maritime nature, with the Bunna motto being ‘the gentle taste of Islay’.

Encased within a heavy black glass bottle emblazoned with the sailor logo and the Roman numerals XII (a numbering system used for their aged releases), the Bunnahabhain 12yo is the core release of the distillery. Made with water from the Margadale spring and bottled at that sweet spot of 46.3%, the 12yo brings forth a rich golden hue.

On the nose the 12yo is light, smooth, sweet and fruity, with ripe autumn apples, dates, plum jam, red grapes and raisins from the ex-sherry casking. Mixed in with the fruits are chestnuts, cashews, pistachios, dark chocolate, brine and rich oak. A veritable cornucopia indeed.

On the palate the liquid hits sharp, salty and dry, like taking a mouthful of seawater on a summertime dip. Underneath sits salted caramel, ginger, mixed peel, seaweed and a faint hint of driftwood smoke. The finish is again salty, and lingers on the tongue like the end of a day at the seaside, a mixture of brine, sweat and sunscreen.

Bunnahabhain is certainly not one of the Ileach peat monsters, choosing to keep that beast well chained in its cave. Instead it manages to sing an incredible song of its maritime environment, perfectly capturing the salt laden winds that blow in from the stormy Scottish coastal waters. The Bunnahabhain is indeed a whisky that is as complex in its nature as it is in its name.

Ardbeg Perpetuum

200 years might not be infinity, but it’s certainly a long time to be producing whisky. Ardbeg distillery, nestled on the coast of Islay, is to be heartily congratulated for reaching such a momentous milestone.

The distillers at Ardbeg love a good special edition release, and in celebration of their big birthday they have brought forth the Perpetuum. The whisky celebrates the love, dedication and skill of its creators, acknowledging that while times and technology change, no machine will ever be able to recreate the spark of the human touch.

It’s certainly a beautiful object to gaze upon, with shiny silver labels, a Celtic braid infinity symbol and PERPETUUM surrounding the box in monolithic black letters. Oh my goodness the 47.4% spirit inside is a worthy representative of Ardbeg’s art. Just to look at it’s a gorgeous pale, silky gold with a subtle peach tinge.

The nose is delicate and creamy, and has delicious buttery shortbread infused with a hint of sea salt. Twining through is a touch of fine smoked meats, smouldering driftwood and hot malt. The first sip delivers rich, woody smoke to float over the tongue. Underneath sits a pool of salty mineral-rich water with the occasional mandarine bobbing around in it, counterpointed by a sharp bittersweet herbal finish that lingers on. As the bottle says, it almost seems to be never ending.

The Perpetuum is a snapshot of the last 200 years of whisky making at Ardbeg, and hints at the way forward into the next 200 years. Like the infinity symbol the represents it, hopefully we will be coming back to the Perpetuum, and indeed all Ardbegs, again and again for many years to come.

‘Big Peat’ or ‘The Perks of Random Conversation at the Bar’

Big Peat

This story begins, as so many great stories do: m’colleague and I were at the bar. Admittedly not an unusual state of affairs. On this particular night we were chatting to our barman mate, and a friend of his that he’d just introduced us to. For the purposes of this story, let’s call him Doug. Doug was feeling in a rather celebratory mood as he’d just scored himself a job working as a pharmacist in sunny (and I mean that in the most ball-of-thermonuclear-fire sense of the word) Alice Springs, which is pretty much smack bang in the centre of Australia. Quite a change from little old Burnie on the NW Coast of Tasmania, which can occasionally be sunny if it really makes the effort.

After the usual necessary social preamble was out of the way, the conversation happily turned to that most mysterious, complicated and variable of subjects… women! No, wait, I meant whisky! Doug, as it turned out, was quite the connoisseur (and not just of whisky. On a side note he very charitably bought us a glass of Cognac from the highest extremity of the top shelf, an interesting experience to say the least). We all shared a common passion for peated whiskies, particularly those from what is arguably the spiritual home of the smoky dram: Islay.

These days people mostly talk about Islay in terms of its single malts, but historically the island’s distilleries injected popular blends with some much needed character (and they still do!). However, there is a theory that history works in cycles, and what was once old becomes new again (which probably explains the questionable return of scrunchies and chokers). Interestingly enough, what was getting Doug excited that evening wasn’t the single malts from one of the hallowed Islay distilleries, but a blend. An all-Islay blend. “It’s fantastic! You should track it down”. Fateful words readers, because a few cheeky drams relaxing the mind and the heady world of internet shopping instantly at ones fingertips is a dangerous combination. Let’s just say that I didn’t take much convincing, and moments later I was the proud owner of a bottle of this curious beastie.

Cut to a few weeks later and m’colleague and I were staring with anticipation at a large post box that we had dubbed ‘The Bunker’. With no little ceremony (mostly involving the humming of the tune from the start of ‘2001: A Space Odyssey’) we cracked open the box, and were greeted by one of the coolest bits of tube artwork this side of Eilean Mhic Coinnich. Meet the Big Peat, an all-Islay blend purporting to contain ‘a shovelful’ of single malts from the distilleries of Ardbeg, Caol Ila, Bowmore, and Port Ellen. The aforementioned artwork is a brilliant graphic-style picture of a hirsute gentleman standing in front of what I can only assume is the Rhinns of Islay lighthouse on a beautiful island day (which is to say that the sky is the colour of tea, and our man has his face squinched up against the wind, which is trying its best to blow his hair away).

Chuckling with glee we popped the top and unsheathed our prize from its scabbard. Gasps of surprise met the sight before us (don’t worry, we hadn’t been ripped off and sent a bottle of JW Red instead). You see, normally we would picture the drams of Islay as being dark and brooding in hue, but the Big Peat was filled with bright spirit the colour of pale golden straw. Some people just like to mess with your mind. Of course, there was only one sensible recourse to meet the conundrum before us, and it wasn’t hiding under the table. Bust out the glasses and crack that sucker open good sir!

A generous splash of whisky later and we were ready to begin uncovering the secrets of the Big Peat. There was no denying that it lived up to its name. The smoke was there as soon as we poured it into the glasses, infused with plenty of dark chocolate, malt, rich earth and those medicinal notes that Ileach whisky is famous for. We were in no doubt about the heritage of the spirit sitting before us, whatever the colour. A closer snort revealed thick sweet notes and perhaps a bit of overripe fruit, like a squashy banana. We eyed each other off; curious, but not too bad a start.

Slurp! Hot, woody, ashy smoke poured into our mouths and then… not much else. Sure, there was a light, sweet after-taste, but it was gone in a flash, and all that was left was spicy, medicinal smoke coiling around the tongue. It was like being on the edge of a bush fire; plenty of smoke getting all up in your face, but no blazing heat to go with it. Hmmm…

We could see what Douglas Laing & Co, the makers, were trying to get at; surely crafting a vatted blend out of the great single malts of Islay should be as awesome a combo as haggis with tatties and neeps! Yet somehow they’d got a wee bit over excited with the whole BIG PEAT malarkey and forgotten that it isn’t just the smoke that makes an Islay dram exceptional, it’s the bricks and mortar and the shape of the fireplace too. The way that sweetness melts into savoury, medicinal tang challenges the tastebuds, dark flavours are shot through with light, seaside elements help wash everything across the palate, and then finally the smoke that sits over them all. It’s a complex ecosystem that requires careful balance to work well.

Sitting back we mused upon the Big Peat. By no means did we think that it was a bad dram, far from it, just that somehow it deserved to be better. Perhaps the mix wasn’t quite right, maybe a dash of Bruichladdich or Bunnahabhain could have rounded out the flavours working underneath the smoke. Who knows? What we did know though, was that the Big Peat had challenged us, and that a random discussion in a bar can lead to interesting and unexpected places. So go on, strike up that conversation, you might just find something new.

Talisker 57˚ North

Whenever I pour one of my non-whisky drinking friends a wee dram (watching in amusement as they splutter noticeably and their face flushes a conspicuous shade of red) I tell them to picture themselves in a small rugged hut on the west coast of Scotland as a fierce Atlantic storm batters the walls and ceiling. That, I proclaim, is the ideal location to enjoy whisky. While a fireplace may sufficiently heat your extremities, a dram of whisky will warm you from the inside out. And if I were huddled in this rugged hut on such a night, the drop I would turn to first is the Talisker 57˚ North.

This whisky, made on the Isle of Skye’s sole distillery, is named for two reasons: firstly (and I may be biased, but I would claim foremostly) because the spirit is bottled at a practical 57%. Secondly (and perhaps more poetically) because the town of Carbost, home to Talisker, is found at 57˚ North of the equator. In this part of the world, your insides are quite often in dire need of warming.

To put it into perspective, Canada’s 2010 Olympic Winter Games host, Vancouver, is situated at a mere 47˚North while my often freezing home state of Tasmania is at just 42˚South. Talisker Distillery is only two degrees further south than notoriously icy Scandinavian capitals Stockholm and Oslo. So it stands to reason that a warming dram or two is created there.

On the nose, there’s no doubting this is an Island whisky. Smoke wafts liberally out of the glass, although possibly more subtly than some Talisker expressions. Other elements are noticeable too: pepper, chorizo, and cured meats. It is like inhaling deeply at a gourmet barbecue.

There is certainly a woodiness about this whisky on the palate – although not reminiscent of your standard oak notes. Instead the flavours are dustier, earthier, more akin to a tree’s bark than the wood underneath. Elements of honey and marmalade hint at typical Talisker sweetness, though it is more toned down than the 10 Year Old. Instead, wonderful new flavours are present such as bacon and buttery toast, as well as some less pleasant bitter sappy elements which give the impression of burning wood that is slightly too green.

The good news is, this whisky leaves the best until last: the finish is undoubtedly the highlight of the dram. It is long – so very long – and hot and lively. After the spiciness fades, the smoke returns gently, bringing your tasting full circle.

Drinking this whisky, I find that I take my own advice. I close my eyes and picture the howling gale, the bucketing rain and the crashing thunder. Scotland is no stranger to wild weather. And in the eye of the storm, the Talisker 57˚ North is the dram you need.
