Everybody knows Glenfiddich and what it’s all about. That doesn’t mean they can’t occasionally bust an ace out of their sleeve and surprise people though. Part of their Experimental Series, the Fire & Cane has been one of the gem finds of the year.

Turns out that peated Speyside malts finished in South American rum casks is a killer combo. The softer Highland peat combines perfectly with the sweet notes developed from the rum finish, creating a brilliantly balanced dram that will appeal even to those who don’t like smoke. The best bit? It’s under $100AUD. It’s hands down one of our favourite whiskies of the year and has led to several of our friends reassessing their relationship with Glenfiddich.

Whipper Snapper Project Q

5 Project Q

There’s no denying it – Whipper Snapper Distillery’s Project Q is the weirdsky of the entire decade. We first tried it as part of our ‘Mystery Whisky’ segment on our podcast (episode 13); I knew what it was while m’colleague was going in blind, but that still didn’t stop me from wondering whether I had landed on a different planet.

The key is in the ingredients, all sourced locally by Whipper Snapper from Western Australia. Malted barley and corn won’t raise any eyebrows, it’s the third, rather more unusual grain that’s the kicker. Quinoa, the South American staple beloved of hipsters and the health conscious, is what gives the Project Q its unique flavour. It’s hard to describe – spicy, earthy and nutty, with overtones of melting plastic, old car dashboard and engine grease. The cost of quinoa means that this will probably only ever be a rare oddity, but if you can find it, it will make you rethink everything you know about whisky. A must try for the adventurous.

While there are so many deserving and hardworking people in the state, each year we like to recognise one individual who has helped make the Tassie scene what it is today. This year the worthy winner is:

Jane Sawford

6 Bill Lark Jane

Believe it or not, Tasmanian whisky was not always flying off the shelves as it is now. Instead of having no stock left to sell, once upon a time Tasmanian producers could not give the stuff away. This all changed when Jane Overeem decided to hit the road to promote her father’s produce to the world and along the way raise the profile of the entire state’s wares. Suddenly people were sitting up and taking notice, beginning the journey that has seen the industry go from strength to strength.

Jane has taken on senior roles not only within Overeem, but Lark as well, and has been involved in organising countless whisky events within the state and on the mainland. These days she and husband Mark have founded Sawford Distillery and are producing whisky which promises to be something special. On top of that she is also helping manage White Label Distillery, the country’s first contract distillery.

A brand new industry needs pioneers leading the way and forging a path so that others can follow. It is safe to say that the Tasmanian whisky scene would not be what it is today without Jane Sawford.

Sometimes a whisky comes at you unexpectedly from the side and completely throws you off balance. That was the Corowa Distilling Co.’s Bosque Verde for us this year. When we first tried it in a bar, I drunkenly demanded the barman source me a bottle. He acquiesced to my request and I have zero regrets over that decision.

100L American oak ex-port barrels aged for just over two years and bottled at 60% isn’t that unusual for Australia, but Drucey and his boys have worked dark magic with the Bosque Verde. Essentially, it’s like they’ve taken a super fruity Christmas cake, blended it up and poured it into a bottle. Another key tasting note we had was leather and tobacco, like a cowboy in an old Marlboro ad. Young, complex and feisty, this is no beginner’s whisky, and it keeps on drawing us back time and again to delve into the layers. If you want to know what gets Whisky Waffle excited, this is it.

An epilogue:

We’d like to mention a couple of honourable mentions for two new innovative Tassie drops. The Adams Pinot Noir Slosh Cask for trying new grains and aging-encouragement techniques and the Hobart Whisky Stout Cask for actually making it taste a little stouty.

And finally our Founders Reserve Award (the dishonourable mention) to the Macallan Fine and Rare 60 Year Old. Whisky is for drinking and sharing with friends, not for sitting on shelves as a status symbol! Runner up is Ted for his dance moves after the Tasman Whisky launch in Burnie…

Heartwood: striving for consistency

Heartwood, Australia’s most famous independent bottler, is striving for consistency. However, with new-make spirit arriving from different distilleries, a varied range of barrel types and never-to-be-repeated combinations of spirits, how on earth can it be considered consistent? Simple. Heartwood is not striving for consistency of flavour – it is striving for consistency of quality.

Heartwood is the creation of the Tasmanian whisky industry’s very own mad scientist: Tim Duckett. Tim has produced his remarkable whisky alongside his day job as an environmental consultant, deciding to dip his toe into the infant Tasmanian whisky scene after meeting Bill Lark in the late nineties. He purchased his first barrel of Lark spirit in 1999, but cannily didn’t rush it out the door before it was ready. The first bottling, Mt Wellington, was released in 2012 and things escalated rather quickly from there.

While there are other independent bottlers in Australia, including TIB, Tim’s other project, there is nothing on earth quite like Heartwood. Regularly bottled at unheard of ABVs, some of which nudge the mid 70% range, each release is limited to several hundred bottles, meaning it sells like hotcakes and has developed somewhat of a cult following.

We visited Tim at Heartwood’s Blackmans Bay bond store where he gave us a peek behind the curtain at the type of flavour profile he values: that which pleases the palate – specifically his palate. Tim seeks to create whiskies which are thick, flavourful and with a finish as long as any whisky on the planet. How does he do this? By pairing good quality spirit with good quality barrels.

It sounds simple, but it is actually far from it; consistently creating high quality whisky is not just the passive process of sticking spirit into barrels and waiting. Tim employs all manner of tricks to get the most out of his whisky, as we found out during our visit. These include intricate blending, either whole casks or simply a few litres here or there, deciding when the oak influence is done and decanting it into vats before beating it with a paddle to drive off volatiles, as well as moving spirit into a warm office to “syrup up”.

When we visited Heartwood HQ the north-facing wall had a number of nearly-ready casks sitting up against it, which Tim explained was the “finishing wall”. He also confessed that he refuses to reuse casks 100 litres or larger unless they have been repurposed with Heartwood witchcraft, and even then, he will only use peated spirit in them… and this is just the tip of the iceberg of strategies Tim uses to create some of the most impressive and sought-after whisky Tasmania has to offer.

Of course, it helps when there is no agenda to meet; no shareholders to appease. Despite its fame, Heartwood is small-scale, a project born out of passion. Therefore, the whisky is released only when it’s truly ready and never to meet a specific profile or timeframe. Age is somewhat irrelevant in Tasmania anyway, with our varied weather conditions and small barrels. Tim claims that the age of 20 litre casks should be measured in seasons, not years, as the Australian summer will age a whisky faster than autumn, winter and spring combined.

During our visit we were lucky to try a few impressive Heartwood and TIB drams which were nearing completion, including spirit distilled at Redlands, Adams and a ‘Renowned New South Wales Distillery’. Most spectacularly, however, we were able to sample the first Heartwood/Belgrove collaboration (which at the date of publication has just been released – and sold out within hours). The ‘Heartgrove’ was a clash of the titans: a coming together of earthy, almost smoky rye notes with a thick fruit layer from the muscat and sherry casks it had been matured in. It was a wild beast, but Tim had tamed it, creating an intriguing rye that went down almost too easily for a 55% drop. If pressed we would have probably claimed it as our favourite, though it certainly faced some stiff competition.

Fascinatingly, none of the drams we tried tasted the same; they weren’t even in the same ballpark. The only thing that linked them was the fact that each one was delicious. As Tim told us, Heartwood has never claimed to produce a consistent flavour profile. Instead he focuses on producing consistently great whisky – and so far he’s achieved it every time.

Heartwood is not only unique among Tasmanian whisky producers: there is nothing on the entire planet quite like it. By refusing to release anything below his expected standard, Tim has ensured a whisky-legacy that will live on even when the last of the Heartwood barrels is empty.

That’s right, the ridiculous strength of the Tasmanian independent titan, Heartwood, was no match in the end for the Speyside pocket-pleaser, Glen Moray. Tim Duckett wasn’t the only Tasmania to fall, with elegant Overeem roundly smashed by indie Islay outfit Bruichladdich. In fact, there’s potential for an all-Islay showdown in the final, with Ardbeg seeing off Glenfiddich’s little sister Balvenie with ease and Laphroaig narrowly fending off the Orkney vikings from Highland Park. First we have to get through the semi-finals though and there’s some tough choices ahead. It really comes down to sweet vs peat – where do you fall in the battle? March Madness Quarter Finals

It’s getting serious now! After what I can only assume were many sleepless nights of pondering the impossible choices presented in round 3 we have 8 winners! And they are:

Some big results, fellow wafflers. Overeem win the battle of Tassie dominance, the two remaining Islay behemoths narrowly overcome their opponents and Highland Park knock out champion Tassie distillery Sullivans Cove, all by only a couple of percentage points. It was an unbelievably close round, with many results only decided by the final few votes.

And now our quarter finals take shape. Bruichladdich have not had too much trouble dealing with opponents so far, but will Overeem prove a sterner test? Glen Moray, everyone’s favourite underdog have scraped through so far, but face Tasmanian independent title favourites Heartwood in the next round. Elsewhere, Highland Park take on Laphroaig and two Whisky Waffle favourites in Ardbeg and Balvenie go head to head.

March Madness Round 3

The suspiciously April-y March Madness Whisky Waffle bracket powers on into Round 3: the round of 16! Once again we’ve halved the field in a vicious round 2 which saw a number of shock results and big guns fall.

Gone is Australian whisky’s founding member Lark, Australian whisky’s  high-selling Starward and all remaining American and Irish representatives. Possibly the biggest shock of all is the defeat of number 3 seed Lagavulin, knocked out by the dark horse, Glendronach.

We now move into the pointy-end of the competition and once again there are some juicy match ups.

In another gut-wrenching all-Australian match up Overeem take on Belgrove, Macallan verse Balvenie in a battle for Speyside supremacy and the last remaining non-Australian or Scottish drop, Paul John, loses to takes on Heartwood. Perhaps the one that kills me the most, however, is my favourite Islay distillery fighting to the death against my favourite mainland distillery: Ardbeg vs Glendronach. Only one can progress to the quarter finals. Who will it be?

March Madness Round 2

Ok, I know, technically it’s no longer March, but Whisky’s greatest elimination challenge continues unabated, pitting distillers from around the world in a series of tense and often unfair head to head bouts. Round 1 has been run and won and the results are as follows:

There were a number of tense tussles throughout the initial qualifying round – several of which involved local drams. In an all-Australian affair, Starward narrowly defeated recent award winner Hellyers Road by claiming 54% of the vote. Whisky Waffle also bid a tearful adieu to Bunnahabhain, defeated by Tassie champion Sullivans Cove which enjoyed 58% success. The other Tassie dram to bow out was Nant, defeated by regular pocket-pleaser Glen Moray.

However the fun does not stop there; as we fondly farewell 32 grand drams, we turn our attention to the subsequent 32. And my, what decisions we will have to make! The round is headlined by some all Australian bouts: Limeburners take on Overeem and Belgrove come face to face against the godfather himself! Elsewhere, the salty kings Laphroaig and Springbank go head to head and there is a battle of the Glens: Glenrothes vs Glenfarclas. A battle sneaking under the radar, but causing me much grief, is the number 3 seed Lagavulin taking on another favourite of mine: Glendromach. Holy. Crap.

The 25 days of Aussie whisky – Day 12: Tasmanian Independent Bottlers TIB??005

On the twelfth day of Christmas my true love gave to me… a glass of Tasmanian Independent Bottlers TIB??005 whisky. Tim Duckett is a man who likes his whisky strong. Chances are that if you have been paying even the slightest attention to the Tassie whisky scene, you will have heard of his bonkers Heartwood label, which releases independently-aged whisky at an average ABV% of somewhere in the mid-sixties (the strongest was 72.5%!). Apart from being totally amazing, the Heartwoods also all cost an arm and a leg (and a liver), so to make things more accessible Mr Duckett created Tasmanian Independent Bottlers as the baby brother to Heartwood. TIBs are still independently aged, but ‘only’ range in the high 40’s-low 50’s percentage wise, so the price is much friendlier.

The spirit for TIB??005 was sourced from an undisclosed ‘Renowned NSW Distillery’ (hence the ‘??’ in the batch code. Potential contenders include Archie Rose, Blackgate and Corowa) and then aged in ex-sherry casks in Hobart. The nose is tremendously citrusy, almost gin-like in nature, with citronella/lemon myrtle, pepper-berry and coriander seed as botanicals. It’s lighter on the mouth than you would expect considering the 49.1% strength and has an odd earthy, ashy quality which make me suspect that some sort of peating has occured. The TIB??005 is a super quirky whisky and one that will give the experienced dramist an interesting conundrum to puzzle over.

Tasmanian Independent Bottlers RD 001

We’ve reached a point in the Tasmanian whisky industry where Tim Duckett can do whatever the hell he likes. Justifiably, too, having broken so many rules with his Heartwood series, resulting in the creation of whiskies so good and so bizarre you’d be forgiven for thinking they were taken straight out of a whisky nerd’s fantasies. However his latest project, under the innocuous sounding moniker Tasmanian Independent Bottlers (or TIB for short), seems to plant itself firmly in reality.

The first release was the product of only one distillery and only one barrel type and was originally intended to be released at 46%, before Tim caved and bumped it up to 48.4%. No poetic title is required – it is simply named after its cask number – and the label is classy and yet plain, lacking in the unique quirky artwork found on Heartwood bottles. Cosmetically this is the Beatles White album released directly after Sgt Peppers Lonely Heart Club Band.

However, Tim still holds the ace up his sleeve: a quality Tasmanian spirit and an intriguing barrel. The first TIB release is from midlands paddock-to-bottle-distiller Redlands, and it has been aged in a Muscat cask.

“That’s more like it Timmy baby!”

Sorry, I got a little carried away there. But you get me, right? Redlands spirit in Muscat barrels assembled by Tim Duckett? This bottle was a must have to me… and it doesn’t disappoint.

It has a big, broad nose full of toffee and oak. There are many tiny subtle aromas breaking through, including pepper, blackberry and spearmint leaves. The palate is quite sweet, loaded with sticky caramel, raspberry jam and dark chocolate. The finish is short and spicy – spicier than most Heartwoods ironically – with lingering raw sugar notes.

Inevitably anyone looking for the next Heartwood release in this bottle is going to go away disappointed – because that’s not what TIB is. This is a far subtler and gentler single malt which does not possess the x-factor of Tim’s other releases. This is not a bad thing, though – it’s a different thing, and a thing that will appeal to some people and not others. It is designed to be more accessible and perhaps easier drinking than Heartwood and every now and again this is exactly what I want. The Convict Resurrection, Vat Out of Hell and Calm Before the Storm are fantastic – but I’d also recommend getting to know their younger brother.

Welcome one and all to the most anticipated award ceremony ever to take place on social media! Nope, it’s not 2017’s Most Carelessly Dressed Celebrities (that’s the second most anticipated) but instead the 2017 Waffle Awards – the prizes given by Australia’s most tongue-in-cheek whisky blog, Whisky Waffle, to the drams that excited them most in the last 12 months.

The rules are simple, all winners must be whiskies consumed by the lads for the first time in 2017 – and they must be able to vaguely remember the experience the following day.

So strap yourselves in for a wild, controversial and extremely subjective ride through our picks of 2017!

As proud Tassie boys, our first award is for the best dram made in our state in 2017. This year, the Isle of the Drammed goes to:

‘Oh @#$%^&* that is good whisky,’ – You after trying this whisky.

Hailing from Tasmanian independent bottler Heartwood, the curiously named @#$%^&* bears the usual madcap cask-strength touch of its creator Tim Duckett, starting in 2nd fill port casks, then finished in 1st fill sherry casks before being bottled at a juicy 62.5% (which, believe it or not, is on the lighter end for a Heartwood).

Tim claims the name comes from the fact that it caused him a great deal of grief during its creation. The @#$%^&* has proved to be something of a sleeper agent for us actually; we’ve tried it alongside other Heartwoods that seem to have the ol’ razzle-dazzle in spades, but somehow the @#$%^&* keeps calmly stepping out as the favourite. Maybe it’s the special edition dinosaur-themed label artwork drawn by Jon Kudelka.

Glendronach do sherried whiskies as well as anyone in the world and after trying the 18 Year Old I thought it could not get any better. I was wrong. Hidden away at a corner table at Whisky Live Hobart was this absolute gem of a whisky. It redefined my relationship with sherried whisky. I went back for seconds.

Glen Moray produces great bottles at more-than-acceptable price ranges, but this is possibly the best value of the lot. The 16 Year Old is far smoother and nuanced than the 12 and for seventy dollars (Australian) it is a must have for all whisky fans with bills to pay. Plus it comes in a shortbread tin! Nuff said.

This award is dedicated to the strange and the bizarre. Whisky that we may not consider… good… per say, but a dram that has certainly intrigued us. This year, the Weirdsky Award goes to:

Flóki Sheep Dung Smoked Reserve

Ok, we realise this technically isn’t whisky as it’s still under 3 years old, but it is so bat(sheep?)-shit crazy that it deserves a mention here. Iceland is a place – you may have heard of it. It has lots of spectacular scenery. It also has lots of sheep. And a whisky distillery. For some reason the distillery, Eimverk, thought it would be a good and reasonable thing to smoke some of their barley using poo from the aforementioned sheep rather than peat, which there is also lots of on Iceland. Smoking things with poo is traditional over there apparently.

I am of the opinion that the Flóki Sheep Dung Smoked Reserve is the drinkable version of a traditional Icelandic delicacy: fermented shark, or Kæstur hákarl, a dish that is surely only used to make unwary tourists cry. The locals are obviously made from tougher stuff than the rest of us. Stick with the standard Flóki release (which is rather good) until, like the best Kæstur hákarl, the Sheep Dung Smoked Reserve has aged for a few more years.

The Tasmanian whisky industry works because it is driven by so many wonderful people. We like to recognise one of these people each year with an award named after the founding father himself. This year, the Bill Lark Award goes to:

Patrick Maguire

Patrick Maguire is a founding member of the Tasmanian distilling scene. A contemporary and a colleague of the man whom this award is named after, he took the bold step in taking over Tasmania Distillery and cleaning up the slightly tainted name of Sullivans Cove Whisky. Not only did he get it back on track, but he took Tasmanian whisky to a whole new level when his release from French Oak barrel HH525 won best whisky at the 2014 World Whiskies Awards. Tasmanian whisky was changed forever and has gone from strength to strength ever since thanks in no small part to the perseverance of one Patrick Maguire.

Belgrove North East Peat Smoked Single Malt

Thinking back across the year to select a worthy drop for The Golden Dram, the Belgrove North East Peat Smoked Single Malt stands out in memory as the one that made me the most effusively loquacious in my attempts to promulgate its meritoriousness. Translation: I was damn excited and wanted everyone to know it. Belgrove is more usually known for its excellent ryes, but the Single Malt is a credit to the versatility of its creator Peter Bignell, a previous winner of the Bill Lark Award. What makes this particular whisky so excellent is the peating; hitherto Tasmanian peat has been sourced from sphagnum bogs in the highlands, which are almost exclusively controlled by Lark.

The peat in this whisky comes from a new source in the North East of the state, dug from a farm owned by Peter’s brother. The first time I took a sip I was sure that I had been accidentally teleported to the West Coast of Scotland! Compared to the softer peat of the Tasmanian highlands, the North East stuff is richer, earthier and more elemental, drawing links with the Scottish coastal and island drams. Sit that over a superbly crafted spirit and I am happy to lay my cards down on the table and declare that I think Peter has a world-beater on his hands. Bloody good stuff.

An honourable mention goes to anything made by Glenfarclas. What a great distillery and still family owned too! In particular the excellent ever reliable 15 Year Old, but also the 40 Year Old, tasted by Nick at the Old and Rare bar at Whisky Live Hobart. It was the best possible conclusion to a fantastic session.

The Founders Reserve Award (AKA the dishonourable mention) goes to White Oak Distillery for proving that just because a whisky is made in Japan, doesn’t mean it’s worth taking on a sumo wrestler to sample.

So that brings us to a close of our 2017 awards. It sounds like the makings of a good tasting! Though maybe give the White Oak a miss.
